Normally, when you hear the words “fast” and “food” together, it triggers thoughts of burgers, greasy chicken and fries. But, it doesn’t have to be that way. You can prepare a meal that’s both quick and healthy.
One in particular, is the Southwestern Vegetarian Cabbage Salad. It contains shredded cabbage, drained black beans, diced tomato, red onion and orange pepper.
This salad is high in fiber, and perfect for keeping blood sugar levels regulated. Also, the large portion of cabbage is perfect as cabbage is a cruciferous vegetable meaning it has strong cancer fighting properties when eaten in its raw state.
Simply chop up these veggies, toss them together and for dressing you’ll combine 1/4 cup salsa and 1 and 1/2 tablespoon of plain yogurt.
