Mom’s Recipe for Peppermint Mocha Coffee (6 servings)
Ingredients:
3 cups half & half
¼ cups unsweetened cocoa
1/3 cup sugar
3 cups brewed coffee
6 peppermint candy canes
Directions:
In saucepan, combine half & half, cocoa and sugar; mix well. Place over medium heat and stir in the coffee, heating until hot. Pour into 6 mugs and garnish each with a candy cane.
Aunt Bev’s Baked Potato Casserole
Ingredients:
1 can cream of chicken soup (10 ¾ oz size)
Sour cream (approx. 20 oz)
¾ to 1 teaspoon salt
½ teaspoon pepper
¼ teaspoon paprika
2 pounds frozen southern style potatoes (thawed ½ hour before use)
4 cups shredded sharp cheddar cheese
Directions:
1. Heat oven to 350 degrees. Spray or grease bottom & sides of a 13” x 9” pan.
2. In a large bowl, mix all above ingredients except the potatoes and cheese.
3. Mix in potatoes and 3 cups of shredded sharp cheddar cheese and pour mixture into pan. Cover with foil.
4. Bake 25 to 30 minutes.
5. Remove foil and bake approximately 20 minutes longer (do not cook long enough to brown the top but do cook long enough for mixture to be bubbling quite a bit).
6. Pull out pan and sprinkle 1 cup shredded sharp cheese on top.
7. Bake uncovered for additional 8-10 minutes. Allow to cool before serving.
Great Great Grandma’s Crisp
Simmer & Boil, stirring:
1 cup brown sugar
1 Tablespoon butter
½ cup raisins (+ can use apples or peaches)
4 cups hot water
Vanilla (a dash or two for flavor)
Pour into a greased baking pan.
Mix:
1 Tablespoon butter
2 tsp baking powder
½ cup sugar
½ cup milk
Slowly add enough flour to make a soft dough
Lay this mixture across the top of the first ingredients in the baking pan and bake at 350 degrees. It will be done when the top is golden brown.
