Sometimes, all you want to do is throw everything in one pot and call it a day. So, we gathered up some of the best one-pot pasta recipes for those days when the last thing you want to do is cook. These are also perfect if you live in a small place and don’t have much counter space to work with!
One pot spinach, artichoke, and chicken pasta
You will need:
- 12 oz linguine (substitute chickpea, edamame, or another pasta alternative for a healthier, gluten-free option)
- 12 oz chicken sausage, cut into pieces
- 2 cups fresh spinach
- 1 jar of marinated artichoke hearts1 parmesan rind
- 1 cup grated parmesan
- 2 tbsp olive oil
- Salt and pepper to taste
- 4 ½ cups of water
Instructions:
- In a large skillet, place all ingredients except grated parmesan and bring to a boil.
- Keep stirring and turning pasta to prevent sticking. Cook for 10 minutes, or until liquid has evaporated.
- Remove parmesan rind and add 1 cup of grated parmesan.
One pot puttanesca
You will need:
- 12 oz linguine (substitute chickpea, edamame, or another pasta alternative for a healthier, gluten-free option).
- 12 oz cherry tomatoes, halved
- ½ cup pitted and halved olives
- ¼ cup capers
- ½ cup fresh chopped parsley
- 2 tbsp olive oil
- Salt and pepper to taste
- 4 ½ cups of water
Instructions:
- In a large skillet, place all ingredients and bring to a boil.
- Keep stirring and turning pasta to prevent sticking. Cook for 10 minutes, or until liquid has evaporated.
- Top with fresh parsley.
Classic one pot sausage and tomato pasta
You will need:
- 12 oz linguine (substitute chickpea, edamame, or another pasta alternative for a healthier, gluten-free option).
- 1 can fire-roasted diced tomatoes
- ½ fennel bulb, thinly sliced
- 1 cup basil leaves
- 12 oz smoked andouille sausage
- 2 tbsp olive oil
- Salt and pepper to taste
- 4 ½ cups of water

- Keep stirring and turning pasta to prevent sticking. Cook for 10 minutes, or until liquid has evaporated.
- Top with fresh basil.
