Easy One Pot Pasta Recipes for a Quick Dinner

Sometimes, all you want to do is throw everything in one pot and call it a day. So, we gathered up some of the best one-pot pasta recipes for those days when the last thing you want to do is cook. These are also perfect if you live in a small place and don’t have much counter space to work with!

One pot spinach, artichoke, and chicken pasta

You will need:

  • 12 oz linguine (substitute chickpea, edamame, or another pasta alternative for a healthier, gluten-free option)
  • 12 oz chicken sausage, cut into pieces
  • 2 cups fresh spinach
  • 1 jar of marinated artichoke hearts1 parmesan rind
  • 1 cup grated parmesan
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 4 ½ cups of water

Instructions:

  • In a large skillet, place all ingredients except grated parmesan and bring to a boil.
  • Keep stirring and turning pasta to prevent sticking. Cook for 10 minutes, or until liquid has evaporated.
  • Remove parmesan rind and add 1 cup of grated parmesan.

One pot puttanesca

You will need:

  • 12 oz linguine (substitute chickpea, edamame, or another pasta alternative for a healthier, gluten-free option).
  • 12 oz cherry tomatoes, halved
  • ½ cup pitted and halved olives
  • ¼ cup capers
  • ½ cup fresh chopped parsley
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 4 ½ cups of water

Instructions:

  • In a large skillet, place all ingredients and bring to a boil.
  • Keep stirring and turning pasta to prevent sticking. Cook for 10 minutes, or until liquid has evaporated.
  • Top with fresh parsley.

Classic one pot sausage and tomato pasta

You will need:

  • 12 oz linguine (substitute chickpea, edamame, or another pasta alternative for a healthier, gluten-free option).
  • 1 can fire-roasted diced tomatoes
  • ½ fennel bulb, thinly sliced
  • 1 cup basil leaves
  • 12 oz smoked andouille sausage
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 4 ½ cups of water

Instructions:

  • In a large skillet, place all ingredients and bring to a boil.
  • Keep stirring and turning pasta to prevent sticking. Cook for 10 minutes, or until liquid has evaporated.
  • Top with fresh basil.
