Okay, we admit it, we’re obsessed with fresh herbs, but one we find ourselves skipping over too often? Dill. Believe us, we’re just as shocked as you because we’re pickle people. So whether you have an abundance of your own fresh dill or just want to incorporate it more, here are 5 fresh dill recipes we’re obsessed with.

Creamy Dill Chicken

We love a one-pan dish, especially one that takes less than 30 minutes. To amp up the flavor, prepare your chicken and sauce in the same pan, then serve with mashed potatoes or tossed greens for a simple and delicious dinner. Check out this recipe from Piper Cooks.

Ingredients:

  • 2 chicken breasts, sliced into fillets/strips
  • 1 Tbsp cooking oil
  • ½ medium onion, sliced or diced
  • 1 cup chicken broth
  • 2 Tbsp cream
  • 2 Tbsp unsalted butter
  • 3 tsp fresh dill

Instructions:

  1. Heat a nonstick frying pan over medium heat. Add the oil and then the chicken. Cook for 2-3 minutes per side or until almost cooked through. Add the onions and cook for about 4 minutes, until softened.
  2. Remove the chicken to a plate temporarily and add the broth. Cook down for about 10 minutes or until reduced by about half.
  3. Add the chicken and the cream and heat through for a few minutes.
  4. Add the butter and whisk while it melts. Remove from heat, add the dill, season with salt and pepper, and then serve.

Cheddar Scones with Fresh Dill

Ingredients:

  • 1¼ cups all-purpose flour plus more for rolling out the scones
  • ¾ cup whole wheat flour
  • 1 Tbsp baking powder
  • 1 tsp sugar
  • ½ tsp salt
  • 6 Tbsp butter chilled and diced
  • ¼ cup minced fresh dill
  • 1 large egg lightly beaten
  • ½ cup heavy cream, plus a little more if needed
  • 2 oz sharp cheddar cheese shredded
  • 2 Tbsp milk for brushing on top

Instructions:

  1. Preheat oven to 450° F and line a baking sheet with parchment paper or a silpat liner.
  2. Whisk together the flours, baking powder, sugar, and salt in a large bowl. Cut in the butter with a fork or using two butter knives until it looks like coarse meal. Sprinkle in the dill; stir in the egg and ½ cup heavy cream, adding more cream 1 tablespoon at a time as needed until the dough comes together but isn’t too wet (you shouldn’t need more than 2 additional tablespoons of cream). Use your hands to mix in the cheddar, being careful not to over-process.
  3. Shape the dough into a ball, then flatten it into a disk. Wrap it in plastic wrap and chill 10 minutes in the freezer.
  4. Turn the dough out onto a lightly floured surface. Roll or press the dough out to a circle about 7 to 8 inches in diameter and ¾ inch thick. Use a floured 2 ½ inch round cookie cutter to stamp out the scones, then gather up the dough scraps and repeat as necessary (you should get about 10 scones).
  5. Transfer the scones to the prepared baking sheet, lightly brush the tops with a little milk, and bake until puffed and light golden brown on top and bottom, about 14 to 16 minutes.

Dill Pickle Deviled Eggs

Deviled eggs in and of themselves are chef’s kiss perfection, but trust us when we say the addition of tangy dill really kicks up the flavor. These dill pickle deviled eggs are an egg-cellent side for any gathering. Check out this recipe from Spend With Pennies.

Ingredients:

  • 6 hard-boiled eggs completely cooled
  • ¼ cup mayonnaise or dressing
  • 2 tsp fresh dill, minced
  • ½ tsp Dijon mustard
  • 1 Tbsp dill pickle juice or to taste
  • 3 Tbsp dill pickle, finely chopped
  • Salt and pepper to taste
  • Dill pickle slices, for garnish
  • Paprika, for garnish

Instructions:

  1. Peel your hard boiled eggs and slice in half lengthwise.
  2. Gently remove yolks and place in a bowl. Add mayonnaise, dijon, and pickle juice. Mash until smooth. Stir in fresh dill, chopped dill pickles, and salt and pepper.
  3. Place filling in a piping bag or freezer bag and pipe into egg whites.
  4. Garnish as desired and refrigerate until serving.

Lemon Dill Sauce

Instructions:

Instructions:
