We spend a lot of money on groceries, and it is such a disappointment when produce starts to spoil before we’ve had the chance to eat it. We know you don’t want your fruits and veggies to go to waste, so we put a list together of suggestions for what to do with wilting produce.
Make Vegetable Broth
If you have a good amount of vegetables that are starting to get old, try making a vegetable broth, which you can then use to cook other meals or freeze until you need it. Check out Feasting at Home’s vegetable broth recipe for inspiration!
Blend It Into Pesto
While traditional pesto is made with basil, it doesn’t necessarily have to be! You might be surprised by the options you have for non-basil pesto, including parsley, cilantro, dill, sage, and oregano. You can use these pestos for spreads, on pasta, as pizza sauce, on sandwiches, as a marinade, and even as an ingredient for salad dressings.
Have a Smoothie
Sometimes we let fruit sit out for far too long, and it ripens quickly. When there’s no way to eat it all in a day or two, what do you do? Make a smoothie, of course! If you have too much fruit for one smoothie, place the fruit in a Ziplock bag and store it in your freezer until you’re ready to blend. Remember, you can mix veggies and herbs into your smoothies, too. One great example is this mango cilantro green smoothie from Dietician Debbie Dishes.
Bake Bread
